Description
A knife ground on both sides wanders away from the rule by half its own thickness. A single bevel does not — the flat face rides the steel and the line is where you put it.
Laminated: a hard core between softer skins, so it takes a fine edge and still survives being dropped. The handle is a dark hardwood, octagonal so it does not roll off a bench.
It arrives sharp. Strop it rather than grinding it and the bevel will stay the shape it left here with.
